RW&B Week, Day 3: Caramelized Onion Hummus, the Perfect BBQ Snack!

Since I’ve showered you with patriotic sweets, I thought we’d whip up something savory today: Caramelized Onion Hummus. Why hummus for the 4th of July, you ask? I’ll tell you.

You think you’re prepared for your Independence Day festivities. You think your menu is complete. You’ve done your grocery shopping for your ground beef, hamburger buns, and hot dog rolls. You’ve got your condiments, your paper plates, and your napkins. You might even have a festive red, white, and blue tablecloth. But you’ve forgotten something very important: appetizers.

If you think your cookout guests are going to wait patiently for you to grill up those burgers and dogs, then you’re sadly mistaken. You have got to have your get-together fully stocked with snacks and apps to hold your hungry houseguests over. And on a more selfish note, you’re going to get quite hungry yourself waiting for the main meal to finish cooking (especially if you’re the one cooking it).

But not just any snacks will do. Things like fruit and cool dips sound good in theory, but they won’t hold up well outside, especially if it’s a typical hot July day. Hummus, however, is the perfect appetizer to serve because it’ll hold up to that summer sun.

My Caramelized Onion Hummus will have all your guests begging for more. It’s easy to make and requires minimal ingredients, so you can make a big batch if need be. But man, is it packing some serious flavor. Those caramelized onions infuse such robust sweetness into every square inch of the creamy, garlicky hummus. Be prepared to have a really intense and intimate experience when you taste it. People watching might judge you, but then they’ll try some and understand.

Don’t forget the most essential part of any party: good snacks. This protein-packed dip will easily hold everyone over until mealtime. In fact, it’s so delicious they might just forget about dinner altogether.

A Few Tips Before You Get Cooking:

  2. The red pepper flakes are optional. If you don’t like heat, leave them out.
  3. You can choose the texture and make it chunkier or smoother based on your preference.

Caramelized Onion Hummus
By The Smart Cookie Cook

Serves 6

Ingredients:

  • 1 large yellow onion, sliced
  • 1 shallot, sliced (or use another yellow onion)
  • ½ cup olive oil, divided
  • 1 16-o.z can chickpeas, drained & rinsed
  • 2 tsp. minced garlic
  • 3 tbsp. shredded parmesan cheese
  • ¼ tsp. salt
  • ¼ tsp. red pepper flakes

Directions:

  1. Bring ¼ cup olive oil to medium heat in a medium skillet. Add the onion and shallot and cook, stirring occasionally, until golden brown and caramelized. Remove from heat; do not drain.
  2. In a food processor, pulse the chickpeas until fine. Add 2 tbsp. olive oil, the onions and their oils, and garlic. Puree until combined. Add the cheese, salt, and red pepper flakes and puree until completely smooth. If you would like a thinner consistency, add the remaining olive oil.
  3. Serve with chips, crackers, veggies, or pita bread. Store in fridge in an airtight container.
