Two days into the spring semester, and guess what? I’m sick of it. If I didn’t have to go to college to get a job someday, then you can bet your buns I wouldn’t waste the time or money. Not that college is a waste for everyone, but it’s just not for me. Unfortunately, until Food Network realizes I am the creative culinary mind it needs and hires me already, college is where I shall remain.

Despite how overwhelmed I get with my workload during the semester, I don’t intend to let it prevent me from producing daily deliciousness for your viewing pleasure. This week, we punched dry mac and cheeses in the face and did the impossible by making a calorie-packed take-out dish light and vegetarian.

Let’s review, shall we?

Which recipe do you think was the most drool-worthy this week?

In case you haven’t noticed, I’ve been on a roll with the V-Day desserts lately. Sure, I don’t have a Valentine to celebrate with this year, but for me, V-Day is more about celebrating my relationship with chocolate than with people. All I care about on the holiday of love is my love for food, and that means tons of sweet recipes for you.

We can’t put many fun V-Day decorations out in the Smart Cookie household because the cats think everything is a toy, but we did find these festive cupcake placemats at Khol’s. Are they cute, or what? DSC_0260

Hopefully, the cats will be too distracted playing with their new toy to destroy my placemats. We bought them this funky contraption, and they played like it was their job, which I guess it is, because they’re cats.Winter 20121-2
