This beauty and I share the same birthday: August 22. To commemorate my b-day, I ordered this gorgeous Chocolate Hypnotic Cake from The Dessert Booth in Clinton, NY. Beautiful, intensely chocolately, and absolutely delicious, I was hypnotized for sure.

Let’s start by talking about the presentation. The Chocolate Hypnotic Cake has a flawless dome shape with a shiny coat of ganache, chocolate cake crumbs sprinkled around the edges, and a white frosting spiral to top it all off. I imagine the cake’s name derives from this trippy snow-white swirl. If you stare at it too long, you really do feel a bit dizzy. Or is that just from the hunger?

Now, let’s move on to taste. The cake consists of three components: a thin layer of dense chocolate cake, a dome of light chocolate mousse, and a coating of smooth chocolate ganache. This is where I was really “hypnotized.” The cake was so deeply chocolately, fulfilling my darkest chocolate dreams. I am a chocolate lover for sure. I knew when I set out to pick a birthday cake that it had to be full of chocolate indulgence. This cake had just that.

We’ll work from the bottom up. The chocolate cake layer was merely a base for all the mousse floating atop it. It had a nice, tasty flavor and crumbly texture, which was actually preferable. You don’t want a super moist, rich cake with all that mousse.

Ah, the mousse. It was the star of this cake, for sure. I won’t call it fluffy, but airy. It seemed to melt away the second it hit my tongue. Fresh from the fridge, it was almost ice cream-like (except lighter and softer). However, after a few minutes at room temperature, it became even softer and creamier. It is the lightest mousse I’ve had. Everyone in my family commented on how you don’t expect it to be so light when it appears so dense. And yet, despite the feathery texture, it was so densely packed with chocolate flavor. I was in a euphoric place with every bite.

Finally, to seal in all of this chocolate magic, was a layer of ganache. It was so smooth in texture and glossy in appearance. It was also some of the best-tasting ganache I’ve had. It wasn’t bitter or dark like most ganaches; it was more on the sweeter side and perfectly complimented the deep chocolate mousse.

In short, this cake tasted like chocolate heaven.

    You should have rated them on their poor service. The cake may have been good but there was no excuse for their lack of professionalism and nearly ruining your birthday because they were so lazy.

      I know. I thought about it. But this post is a rating of the cake, not the dessert booth. I had a whole paragraph ripping the apart but I knew some people would take it the wrong way and just think i’m a jerk.
